The Cabacés Agricultural Cooperative is one of the historic entities of the Priorat region and a benchmark in the production of extra virgin olive oil. It was founded in 1933 by a group of 51 farmers who joined forces to produce and market the olive and grape harvests of the municipality. Since then, the cooperative has maintained a firm commitment to quality, tradition, and the preservation of the Cabacés agricultural landscape.

An oil rooted in the territory

Currently, olive oil represents 90% of their production, distributed across two main lines: conventional and organic olive oil, both produced using processes that respect the natural rhythms of the land and traditional techniques. Many of the cooperative's olive trees, most of them centuries old, are planted within the Montsant Mountain Range Natural Park, a privileged environment that lends character and personality to the final product.

The majority of the olives they use are of the Arbequina variety (95%), renowned for its mild and fruity flavor. The remaining 5% comes from traditional varieties such as Rojal and Picudo Rojo, which contribute specific nuances from this area of Priorat. All of this production is part of what is known as the Priorat del Aceite (Priority of Olive Oil), a group of villages where olive cultivation is dominant and constitutes a key element of the landscape and local culture.

A highlight of the Priorat Olive Oil Route

The Cabacés Cooperative is one of the sites included in the Priorat Olive Oil Route, a gastronomic itinerary that highlights the region's olive oil tradition. Visiting Cabacés offers a close-up look at the work of the producers, an understanding of the importance of the olive tree in this territory, and the discovery of unique flavors crafted with dedication and respect for the land.

The cooperative also offers professional tastings where visitors can learn to recognize the aromas, flavors, and characteristic sensations of its oils. It's an ideal experience for delving into olive oil culture and discovering the complexity behind a product so prevalent in Catalan cuisine.

The Olive Oil Fair: an unmissable event

Every first week of December, the cooperative organizes a fair dedicated to its flagship product: the olive oil they market under the Baronia de Cabacés brand. During this event, they present the season's new products, offer tastings, workshops, culinary demonstrations, and other activities related to the world of olive oil.

This is an ideal time to visit Cabacés, discover firsthand the production process and enjoy a festive atmosphere that highlights the link between the community and olive oil.

Scheduled visits to discover the space

The cooperative offers guided tours of its facilities, allowing visitors to observe the production process, sample different olive oils, and learn about the history of the town and its agricultural surroundings. To participate, it is necessary to contact the cooperative in advance and reserve a place.

Visiting the Cabacés Agricultural Cooperative is to discover a way of understanding the land that has endured generation after generation. Among centuries-old olive trees, intense aromas, and flavors that tell the story of the landscape, the experience offers a close look at the dedication of a community that has preserved its agricultural heritage. An essential stop for experiencing Priorat with authenticity and passion.
